Lemon Chamomile Muffins

Title These muffins are a favorite evening snack of mine. Although they can make a great snack anytime of the day.


For the cake:

2 2/3 cups all purpose flour lemon zest
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
3 1/2 cups sugar
1 1/4 cups buttermilk
3/4 cup vegetable oil
2 large eggs 2 large egg yolks
2/3 tsp. S.W. vanilla extract
¼ cup Starwest poppy seeds

For the glaze:

1 cup confectionary sugar
6-8 teaspoons of chamomile tea, brewed and cooled


For the cake: Preheat oven to 375 degrees. Place paper liners in muffin pans. In a large bowl, mix flour, baking soda, baking powder, salt, and lemon zest with a fork or whisk. In a mixing bowl, cream together butter and sugar.
