Garbanzo Veggie Burger

Garbanzo Veggie Burger
Yields 5 burgers

2 tbsp vegetable oil
1 tsp fennel seeds
1 tsp curry powder
1 tsp ground coriander
1 red onion, finely minced
1 cup white button mushrooms, chopped
1 cup canned garbanzo beans
4 medium carrots, grated
cup walnuts, chopped
3 tsp cilantro, chopped
Salt and pepper to taste

In a large skillet, heat 1 tbsp of vegetable oil and saut the onions until softened. Stir in the spices (coriander, curry and fennel) and cook for a further few minutes. Then add the mushrooms and continue cooking for about 5 minutes.

Add the mixture to a food processor together with the garbanzo beans. Pulse the mixture until it is well chopped, but not pured. Place the mixture into a large bowl and add the remaining ingredients (except the flour). Shape five burgers with floured hands.

Heat 1 tbsp of vegetable oil in a frying pan and fry the burgers on each side until cooked through and browned.

Serve with homemade potato wedges or in a bun, together with a tossed green salad.
