Ingredients:
1 pound pork loin, cut into slices
1/2 cup all purpose flour
1/8 teaspoon pepper
2 eggs
1 tablespoon water
1 cup seasoned bread crumbs
2 tablespoons canola oil
Instructions:
Use three separate shallow bowls for the coatings. Mix the flour and pepper together in the first bowl. In the second bowl place the eggs and water. Whisk the two ingredients until well blended. In the third bowl place the bread crumbs. Take each slice of pork and first dip them into the flour. Be sure to shake off any excess. Next dip the slices into the egg mixture. Last coat completely with the bread crumbs. Place the canola oil into a large skillet over medium high heat. Heat the oil to hot but be careful not to let it begin smoking. Place the coated pork slices in the hot oil. Cook 3 minutes turn and continue cooking an additional 2 minutes or the slices are a light golden brown and crispy. Remove and drain on a piece of paper towel before serving.
