Carnitas Roast This week I will show you how to do a carnitas roast. This is my version of the traditional carnitas. Roasted and then either fried or crisped under a broiler. INGREDIENTS 2-3lb. pork shoulder roast orange juice white wine 1 red onion garlic powder onion powder S.W. pork rub (a couple pinches) cumin seed (whole or powder) spanish paprika white pepper 1 can of el pato 1-2 jalapenos optional There are no measurements for this recipe because I learned how to make carnitas from a lovely old lady who never measured anything, and as such it has evolved into my own creation over the years. Now I hope you will do the same and experiment with this recipe. When making your rub it is best to use equal parts of all spices except salt or where noted above. DIRECTIONS Grind your cumin seed in a spics grinder and then add each spice one at a time and mix well in the grinder.
