Brunchtime Sweetcorn Fritters
1 can sweetcorn, drained
1 can creamed corn
2 tsp baking powder
3 cups plain flour
1 cup milk (or more if needed)
Pinch cayenne pepper
Maple syrup for dipping
Combine all ingredients (except maple syrup) in a bowl. Heat some oil in a frying pan. Drop sweetcorn mixture from a big spoon and fry each side until fritters are cooked through and golden brown.
Serve immediately with maple syrup.
