Breakfast Burrito with Egg

1 tbsp olive oil
cup cooked ham, diced
cup fresh mushrooms, diced
cup onion, diced
cup yellow pepper, sliced
cup red pepper, sliced
Dash of cayenne pepper
Salt and pepper to taste
4 tortilla shells

Cheddar cheese, shredded
Tomato salsa


Add olive oil to skillet and heat over medium heat. Add ham, mushrooms, onion, peppers and cook for about 3 to 4 minutes, constantly stirring. Add salt, pepper and a pinch of cayenne pepper to taste. Drain this mixture well.

Heat tortilla shells slightly in the oven or microwave (about 20 seconds).

Scoop of mixture into each tortilla, sprinkle with cheddar cheese and top with tomato salsa.

Roll up Burritos and enjoy this great Southern breakfast food!
