Brain Cakes (Halloween cupcakes) These are great treats for a Halloween party or really just for anytime you have a sweet tooth. INGREDIENTS For the cake: 2 2/3 cups all purpose flour 1 1/2 cups unsweetened cocoa powder 1 1/2 teaspoons baking powder 1 teaspoon baking soda 3 1/2 cups sugar ½ cup freshly vodka, whip cream flavor 1 1/4 cups buttermilk 3/4 cup vegetable oil 2 large eggs 2 large egg yolks 1 tablespoon Starwest vanilla extract 1 teaspoon Starwest almond extract 1 1/4 cups (about 7 ounces) mini semisweet chocolate chips 1 1/2 teaspoons salt For the frosting: ¼ to ½ cup Blackberry Coulis Sauce 4 cups heavy whipping cream 1 cup white sugar 1 ½ cup confectionary sugar For the Coulis: 1 carton fresh blackberries 1 tablespoon white sugar ½ cup water DIRECTIONS For the cake: Mix flour, cocoa, cinnamon, baking powder, salt, and baking soda into large bowl with a whisk Combine sugar, vodka, buttermilk, oil, eggs, egg yolks, almond, and vanilla in another large bowl. Using electric mixer, beat egg mixture until blended. Add dry ingredients. Beat on medium speed until blended, scraping bowl occasionally, about 4 minutes. Stir in chocolate chips. Spoon 1/4 cup batter into each paper mold. Bake cupcakes, 1 sheet at a time, until puffed and center is just firm to touch, about 24 minutes. Transfer cupcakes to racks and cool completely. Place blackberries, sugar, and water in a blender and set-it on high speed until well combined.
