Applesauce With Cinnamon

4 lbs cooking apples (such as Golden Delicious, Granny Smith, McIntosh)
4 strips of lemon peel
3 inch cinnamon stick
4 tbsp fresh lemon juice
cup dark brown sugar
1/8 cup white sugar (or less)
1 cup of water
Pinch of salt

Peel, core and cut the apples into small chunks. Place all ingredients into a large pot and cover. Bring apples to a boil, lower the heat and simmer for about 30 minutes.

Remove from heat and discard lemon peel and cinnamon stick. Mash the apples with a potato masher until smooth.

Serve (warm or chilled) with vanilla ice-cream or vanilla yoghurt.
